Matzo (matzoh/matzah) bread (also known as matzah and matzoh) is an unleavened bread typically served during Pesach (Passover)
Ingredients:
160ml boiling water
80ml oil (vegetable or groundnut)
1 tbsp sugar
1/2 tsp salt
140 to 210g matzoh meal
3 eggs
Method:
Combine water, oil and sugar in a bowl then add the matzoh meal and stir to combine. Add the eggs, one at a time, beating thoroughly to combine after each addition.
Wet your hands with cold water (this prevents them from sticking to the dough) then take small pieces of the dough and roll into circles about 10 to 12cm in diameter.
Place on greased baking trays and transfer to an oven pre-heated to 200°C. Bake for about 30 minutes, or until golden brown.
Note, if you see that your matzoh are curling then prick the surface of the dough with a fork prior to baking. Also, some recipes call for unsalted matzos, simply omit the salt from the recipe above when preparing these kinds of flatbreads.
