Tripe Soup a Classic British recipe for a country-style soup of honeycomb tripe sliced in a base of pureed potato and onions with milk thickened with a flour roux.

Ingredients:

1kg prepared honeycomb tripe, cut into small pieces
2.25l white stock
2 onions, minced
2 potatoes, chopped
25g butter
25g plain flour
300ml milk
2 tbsp chopped parsley
salt and freshly-ground black pepper, to taste

Method:

Combine the tripe, stock, onions and potatoes in a saucepan. Bring the mixture to a boil, reduce to a simmer, cover and cook for at least 1 hour, or until the tripe is tender.

On a plate, blend the butter and flour to a sooth paste. Chop into small pieces and add to the pan, one at a time, stirring until they dissolve into the soup. Continue simmering until the soup has thickened then add the milk and parsley. Season to taste and allow the soup to heat through (but do not boil).

Serve hot, ladled into warmed soup bowls.
