Trinidad Mauby

This is a classic Trinidadian drink, versions of which are made throughout the Caribbean (and sometimes known as mavi). The main constituent is mauby bark (the dried bark of certain trees in the Colubrina genus including Colubrina elliptica (also called behuco indio) and Colubrina arborescens, a small tree native to the northern Caribbean and south Florida. You can often buy the dried bark in West Indian or Caribbean markets.

Ingredients:

3l water
4 or 5 strips of dried mauby bark
1/2 tsp aniseed
1 piece of cinnamon
600g sugar (or to taste)
2 tbsp Angostura bitters (or to taste)

Method:

Combine the ingredients (except the bitters) along with 1l water in a pan, bring to a boil and continue boiling for 30 minutes. Strain the mixture through a fine-meshed sieve then add the remaining water and the Angostura bitters. Adjust the sweetness to your liking then allow the mixture to cool and bottle.

Store in the refrigerator and serve cold over ice.
