Sawine (Trini Sweet Baked Noodles)

Sawine (Trini Sweet Baked Noodles) is a traditional Trinidadian recipe for a classic dessert of thin egg noodles (or vemicelli) cooked in a sweetened evaporated milk custard. Also known as 'sawine' this dish can also be made with vermicelli.

Ingredients:

450g thin curly egg noodles (or vermicelli)
250g sugar
6 eggs
115g butter, cubed
225g raisins
1 tsp ground cinnamon
1 tin evaporated milk
pinch of salt

Method:

Bring a pan of lightly-salted water to the boil and add the egg noodles. Cook for about 6 minutes (or 3/4 of the recommended cooking time). Drain the noodles, add to a bowl. Whisk together the eggs, evaporated milk, cinnamon, sugar and salt. Pour over the noodles then add the butter and raisins.

Pour into a baking pan and place in an oven pre-heated to 180°C. Bake until firm and lightly golden on top (about 25 minutes). Serve hot.
