Ingredients:
200g freshly-grated coconut
200g sugar
1 cinnamon stick
180ml water
1 tsp freshly-grated ginger
a few drops of red food colouring for the pink version (optional)
Method:
Combine all the ingredients in a pan and bring to a boil over low heat, stirring frequently. Add a few drops of red food colouring if you want the classic pink version, then continue cooking, stirring often, until the mixture begins to pull away from the side of the pan. Take off the heat and spoon the mixture onto a greased baking tray, piling it about 15mm deep.
Allow to cool until you can handle it then cut into pieces and serve.
