This is a traditional Trinidadian mild spice blend typically used in vegetarian dishes like steamed green beans (though it is also used in duck-based recipes). The origins of the spice blend derives from Trididad and Tobago’s Indian population but the blend is specific to the islands.
Place a non-stick pan over medium-low heat. Once the pan is hot add in the spices and toast them, shaking the pan frequently, until the spices are toasted (darkened) and very aromatic (about 2 minutes). Take care, however, not to burn the spices or they will become bitter.
Turn the spices onto a plate and allow to cool before spooning into a spice or coffee grinder. Process to a fine powder, transfer to a jar, secure the lid and store until needed.
They will keep for up to 2 months.
