Travers de Porc Grillé (Barbecued Ribs of Pork) is a traditional Mauritian recipe for a classic dish of pork ribs marinated in onion, chilli, parsley and vinegar before being barbecued or grilled to cook. Ingredients:

1.2kg pork ribs
1 hot chilli, finely chopped
5 garlic cloves, peeled and chopped
2 onions, peeled and chopped
5 sprigs of flat-leaf parsley
oil
5 dessert spoons white wine vinegar
salt and freshly-ground black pepper

Method:

Pound the chilli and garlic in a mortar to make a paste. Mix in a bowl with the onion, parsley, chilli and garlic paste and vinegar. Season the pork ribs with salt and black pepper then pour over the onion mixture and rub into the meat.

Place on a dish, cover and set aside to marinate for 4 hours. In the meantime pre-heat your barbecue. When the meat has marinated sufficiently, lightly grease with oil then place on your barbecue and cook for about 30 minutes, turning regularly.

When the ribs are cooked through, slice into pieces and serve with a hot pepper sauce.
