Traditional Coleslaw: A British recipe for a classic coleslaw (slaw) of carrot, cabbage, bell pepper and radish in a mayonnaise base.

Ingredients:

1/2 green cabbage
1/4 red cabbage
3 carrots, scraped and coarsely grated
6 radishes, scraped and coarsely grated
1 red bell pepper, de-seeded and chopped
4 spring onions, finely sliced
3 tbsp flat-leaf parsley, chopped
250g mayonnaise
salt and freshly-ground black pepper, to taste

Method:

Remove the cores from the cabbages and shred the leaves as finely as you can.

Place the cabbages in a large bowl and mix with the carrots, radishes, red bell pepper, spring onions and parsley.

Add the mayonnaise and season to taste with salt and black pepper. Toss thoroughly to combine, cover and chill for at least 1 hour before serving.
