Traditional Bolognese Sauce is a traditional Italian recipe for a classic meat and tomato based sauce that can either be served over pasta or used as a base for lasagne. The full recipe is presented here and I hope you enjoy this classic Italian version of: Traditional Bolognese Sauce.

Ingredients:
1 tbsp butter
90g bacon (or raw ham), chopped
1 onion, finely chopped
1 carrot, scraped and chopped
1 celery stick, finely chopped
225g lean beef, minced
120g chicken livers
1 tbsp tomato purée
6 tbsp white wine
300ml stock or water
salt, freshly-ground black pepper and freshly-grated nutmeg, to taste
75ml cream or whole milk
Method:
Melt the butter in a pan and use to fry the bacon, onion, carrot and celery until the vegetables are soft (about 10 minutes). Add the meat and fry, stirring frequently, until nicely browned. Chop the chicken livers (remove any membranes) and add these to the pan.
Continue cooking for about 3 minutes then stir in the tomato purée, wine and stock. Season to taste with salt, black pepper and nutmeg then gently bring to a boil. Reduce to a simmer, cover and cook gently for about 40 minutes, stirring occasionally.
Just before serving stir in the cream or milk and adjust the seasonings to taste.
