Tofu Laver and Leek Croquettes

Ingredients:

5g dried laver flakes
200g leeks, finely julienned (cut into thin strips)
300g tofu, crushed with a fork
2 tbsp wholemeal flour
3 tbsp soy milk or almond milk
pinch of turmeric and sea salt
1/4 tsp ground ginger
1/4 tsp mixed dried herbs
1 tbsp soy sauce
3 tbsp olive oil

Method:

Heat the olive oil in a pan, add the leek pieces and fry lightly until soft. In a separate pan, dry toast the laver flakes for a few seconds. Turn these onto a plate and set aside.

When the leeks are soft and translucent, add the soy sauce, spices, herbs and tofu to the pan along with the toasted laver. Stir-fry the mixture for a couple of minutes then scatter the flour over the top and stir to combine. Add the soy milk (or almond milk) and cook for a few more minutes, until the mixture binds together.

Take off the heat and allow to cool completely then shape the mixture into croquettes. Dust these with plain flour and fry in plenty of olive oil until golden brown. Drain on kitchen paper and serve hot as an accompaniment.
