Tick-Keeah Kebab

Ingredients:

1kg fatty beef or mutton, finely chopped
1 tsp onion, ground in a mortar
1/4 tsp ground turmeric
1/2 tsp garlic, ground in a mortar
1/4 tsp chilli powder
1/2 tsp freshly-ground black pepper
1/4 tsp ground ginger
1/2 tsp garam masala
1 tbsp natural yoghurt
ghee or butter, melted, for brushing
1/2 tsp salt
1 egg

Method:

Using a mortar, pound the meat to a paste. Turn into a bowl and mix with the spices and the yoghurt.

Separate the egg, beat the white until stiff then beat the yolk in a separate bowl and fold into the whites. Fold this mixture into the meat to bind. Form the meat mixture into balls of equal size. Flatten each one slight then brush all over with ghee or melted butter.

Pre-heat your barbecue, then take a metal skewer, about 50cm long and pass through the middle of each ball. Now press each tick-keeah so that it almost makes contact agains the next. Brush the kebabs with more melted butter, then place on your barbecue and cook, turning frequently and basting with the melted butter, until the meat is cooked through and is nicely golden brown.

When done, remove the meat from the skewers and serve accompanied by a href="./fetch-recipe.php?rid=misc-chapati">chappattis or parottas.
