Tchevapchitchi (Bulgarian Minced Meat Croquettes) is a traditional Bulgarian recipe for a classic dish of minced meat mixed with herbs, garlic, onion and chillies that are shaped into croquettes before barbecuing or grilling. Ingredients:
1kg minced meat (beef, pork, veal, goat, mutton or a blend)
4 garlic cloves, finely chopped
1 tsp sea salt
1 tsp baking soda
2 tsp freshly-ground black pepper
1 tsp cayenne pepper
1 egg white, beaten
2 large onions, finely chopped
2 small hot chillies, sliced into thin rings
Method:
Combine all the ingredients (except the onion and chillies) in a bowl and mix thoroughly with your fingers. Take small pieces of the mixture and shape into finger-sized sausages about 2cm thick and 5cm long.
Place on a pre-heated barbecue (or under a hot grill [broiler]) and cook, turning often, for about 15 minutes or until well browned on the outside and cooked through.
Serve on a bed of finely-chopped onion and garnish with the sliced chillies. Typically this is served accompanied by shopska salad.
