Gulai Ikan Karibia, or Caribbean Fish Stew, is a flavourful and aromatic dish that is popular in the Turks and Caicos Islands. This stew is a delightful curried combination of Caribbean spices and fresh seafood, creating a comforting and satisfying meal.

Ingredients:

500g white fish fillets, such as snapper or grouper
2 tbsp Turks and Caicos curry powder
1 onion, sliced
3 garlic cloves, minced
1 red bell pepper, sliced
250ml coconut milk
2 tomatoes, diced
500ml fish or vegetable stock
2 tbsp fresh coriander leaves, chopped
Salt and freshly-ground black pepper to taste

Method:

Place a large saucepan over medium heat. When hot add the oil and use to fry the onion, garlic, and red bell pepper for about 6 minutes, or until the vegetables are soft.

Scatter over the curry powder and cook for another 2 minutes, stirring constantly.

Now pour in the coconut milk and the fish or vegetable stock. Bring the mixture to a boil then reduce to a simmer.

Gently add the fish fillets and diced tomatoes to the pot. Return to a simmer and cook for about 15-20 minutes, or until the fish is cooked through.

Season to taste with salt and pepper, turn into a warmed serving bowl and garnish with fresh coriander before bringing to the table.
