Turks and Caicos Curry Powder

Like many other Turks and Caicos recipes the basis for this recipe comes from Jamaica. Colombo curry powder from the French Caribbean is also used.

Ingredients:

2 1/2 tbsp Ground turmeric
1 tablespoon Ground coriander seeds
1 tablespoon ground Cumin seeds
2 tbsp ground Allspice
2 tbsp Ground ginger
2 tbsp Yellow mustard seed powder
2 tbsp Ground fenugreek seeds
1 1/2 tsp Black pepper
2 whole cloves pounded to a powder in a mortar
1 tsp grated nutmeg
1/2 tsp Ground scotch bonnet chilli

Method:

Simply combine all the ingredients in a bowl and mix well until thoroughly blended. Spoon into a small air-tight jar, secure the lid and store in a cool, dark, spot.

The curry powder should keep for three months.
