Tanzanian Meat Curry is a traditional Tanzanian recipe for a classic dish of chicken cooked with potatoes and onions in a tomato-based sauce with aromatic spices, ginger and chilli powder. Heat the oil in a large frying pan over medium heat. Once hot add the onion, garlic, ginger, cumin, cardamon, cinnamon, coves, chilli powder and turmeric. Stir to blend into the oil then add the tomato purée and cook for about 10 minutes, stirring frequently.
Add the chicken, reduce to a low simmer then cover and cook for about 35 minutes, or until the chicken is tender. Stir in the potatoes, re-cover the pan and cook for a further 15 minutes, or until the potatoes are tender.
Add the coriander, stir to mix then simmer, uncovered, for 10 minutes more. Serve hot with chapatis and/or rice.
