Tanzanian Curried Okra

Okra is a fruit, eaten as a vegetable that is native to African. Indeed, okra probably reached India from West Africa. In return, Indian traders introduced spices and Indian cookery styles to West Africa. As a result West Africa, particularly Swahili, cuisine is significantly influenced by Indian techniques.
Ingredients:
500g young okra pods, topped and tiled
2 onions, peeled and sliced
2 tsp vegetable oil (groundnut oil typically)
1 tbsp dried hot red chillies (reduce for a milder curry), broken into small pieces in a mortar
1 tsp curry powder
1/4 tsp ground turmeric
salt and freshly-ground black pepper, to taste
Method:
Cut the okra into 1cm wide rounds. Place the slices in a non-reactive bowl (glass or ceramic) and sprinkle liberally with salt. Now pour in enough iced water to cover the okra, ensuring that each piece is fully submerged. Transfer the bowl to the refrigerator and chill for at least 2 hours.
After this time, drain the okra. Heat the oil in a heavy frying pan until the oil begins to shimmer. add the okra and fry for about 10 minutes, or until lightly browned (turn them often to cook evenly and prevent sticking).
Now add all the remaining ingredients and fry for 3 minutes more, stirring frequently, or until the onions are soft and translucent.
This curried okra is typically served as a vegetarian side dish or accompaniment.
