Tacos di Pesce (Fish Tacos) a Classic Mexican recipe for a dish of tacos filled with tomatoes, fried fish, avocado and red onion toped with a raw sauce of onion, bell pepper, coriander and sugar.

Ingredients:

8 tacos
250g fish fillets
1 avocado
6 medium tomatoes, blanched, peeled and de-seeded
1 small onion, chopped
2 red onions, chopped
1/2 red bell pepper, de-seeded
2 lemons
1 tbsp chopped coriander (cilantro) leaves
1 tbsp oil
1 pinch of caster sugar
salt and freshly-ground black pepper, to taste

Method:

Coarsely chop 4 of the tomatoes and combine in a blender with half the small onion, bell pepper, coriander, sugar and salt and black pepper. Pulse to chop then process to a thick sauce.

Peel the red onion and slice into rings. Peel the avocado, remove the central stone and cut into cubes then toss with the lemon juice to prevent the flesh from browning.

Dice the remaining 2 tomatoes.

Heat the oil in a frying pan, add the fish fillets and fry for 2 minutes per side. Cut the fish into small pieces and season with salt and black pepper then sprinkle over a little lemon juice.

Fill the tacos with the diced tomatoes, fish, avocado, red onion and a little of the thick sauce.

Serve on a bed of lettuce leaves and garnish with a few lemon wedges. If you have any left-over sauce serve this in a bowl to accompany.
