Supu ya Kuku (Zanzibar Chicken Soup)

Supu ya Kuku (Chicken Soup) is a traditional Tanzanian recipe (from Zanzibar) for a classic soup of chicken with with cabbage and onions in a light broth flavoured with celery and tomato. Ingredients:

100g onions, finely chopped
100g cabbage, finely chopped
1 small tomato, finely diced
1 stick celery, finely chopped
1 carrot, sliced into rounds
60g butter
1 x 700g chicken, quartered
2l water
1 tsp salt
1/2 tsp pepper

Method:

Fry the onions, tomatoes, carrot and celery in the butter in a large saucepan until the onions soften then add the chicken pieces and cook until browned on all sides. Add the water and season with salt and black pepper.

Simmer gently for 1 hour, until the meat is tender. Remove the chicken from the pot, allow to cool and cut the meat into portion-sized pieces.

Return to the pot, adjust the seasonings and serve ladled in warmed soup bowls.
