Salated Zabady Bil Ajur (Sudanese Cucumber and Yoghurt Salad)
Salated Zabady Bil Ajur (Sudanese Cucumber and Yoghurt Salad) is a traditional Sudanese recipe for a classic salad of cucumber and garlic in a plain yoghurt dressing flavoured with little berbere spice. This salad is common to both Egypt and Sudan. The Sudanese version is presented here.
Ingredients:
500ml plain yoghurt
a pinch of Berbere spice
1 garlic clove, finely minced
1 large cucumber, peeled, de-seeded and grated (or finely diced)
salt and freshly-ground black pepper
Method:
Combine all the ingredients in a bowl, cover and refrigerate for about 3 hours, or until thoroughly chilled. Adjust the seasonings to taste immediately before serving.
This is a summer salad which can be found not only in Egypt, but also Sudan, Turkey and the Balkans.
