Ingredients:
150g sago grubs, well washed
1 onion, sliced into thin wedges
1 red bell peppers, sliced
2 baby leeks, sliced into strips
4 garlic cloves, finely chopped
3cm piece of ginger, grated
1 lettuce, leaves torn
4 tbsp soy sauce
salt and ground black pepper, to taste
Method:
Place a wok over high heat. Add in the sago grubs, and as they cook they will release their oil. Remove the sago grubs and set aside.
Add in the onion and red bell pepper and stir fry for 2 minutes.
Now add in the leeks, garlic, ginger and soy sauce. Stir fry for 2 minutes more.
Return the sago grubs to the pan and continue cooking for 2 minutes then season with salt and black pepper.
Add the lettuce leaf pieces, cook for 1 minute and serve.
