This is a modern Fusion recipe that cooks red cabbage by stir-frying but uses South Indian flavourings. So, if you want something different to accompany your Christmas meal this year, why not give this a try?
Ingredients:
500g red cabbage, finely shredded
100g green peas, boiled
2 Onions, finely sliced
2 Green Chillies, slit lengthways
2 tsp amchoor (Dry Mango Powder)
1 1/2 tsp Kasoori Methi (dried fenugreek leaces)
2 tsp Red Chilli Flakes
1 tsp Cumin Seeds
1/2 tsp garam masala
1 tbsp Vegetable Oil
5 Curry Leaves
pinch of Asafoetida Powder
Salt, to taste
Method:
Place a wok or deep frying pan over medium heat. Once hot add the cumin seeds. As soon as they begin spluttering (about 40 seconds) add the asafoetida and the curry leaves. Stir-fry for 30 seconds.
Add in the green chillies and fry for 30 seconds. Now add in the onions and cook for about 5 minutes until soft and translucent.
At this point add the cabbage and season to taste with salt. Sprinkle over the garam masala and just a little water. Stir to mix then cover and cook for about 10 minutes, until tender.
Stir in the cooked peas and mix thoroughly to combine. Once the liquid evaporates away add the mango powder, chilli flakes and dried fenugreek. Mix well to combine.
Turn into a warmed serving dish. This can be served as an accompaniment or as a vegetarian main course accompanied by phulkas, rotis and/or rice.
