The recipe for this classic Australian steak dish comes from one of this site's readers, John Sayers and I have to thank him for providing it and the history of the dish. The original recipe comes from a restaurant in Perth and the chef named it after his wife. This recipe comes from that very restaurant.

Ingredients:

2 fillet steaks (these should be 25mm thick)
125ml cream
1 tbsp Worcestershire sauce (this really has to be the original Lee & Perrins)
1 garlic clove, crushed
1 tbsp finely-chopped parsley, to garnish
oil for frying

Method:

Use a very sharp knife to cut the steaks through horizontally so that you almost cut all the way then open the steaks out so that you have two joined steaks 12mm thick.

Add oil to a very hot pan and use to fry the steak until done to your liking. Remove the meat from the pan and place on warmed plates then set aside as you prepare the sauce.

Add the cream, Worcestershire sauce and garlic to the pan and bring to a boil. Cook, stirring constantly, until the sauce has thickened. Take off the heat and pour over the steaks. Sprinkle with chopped parsley and serve.
