This classic and deceptively simple French recipe for peppered steak is a classic and should be in everyone's culinary arsenal.

Ingredients:

6 teaspoons of lightly crushed black peppercorns
4 lean rump, fillet or sirloin steaks
25g butter
2 cloves garlic, crushed
100g mixed mushrooms (button mushrooms can be used, but mixed wild mushrooms are nicer)
4 tablespoons brandy
12 tablespoons whipping cream.

Method:

Lightly press the peppercorns into the steaks and allow to sit for about ten minutes.

Heat oil in a pan and cook the steaks (2–3 minutes a side for rare and 6–7 minutes a side for well done). Remove these from the pan and keep warm. Meanwhile melt the butter in the same pan and fry the garlic and mushrooms.

Add the brandy and cook for 1 minute, then add the cream. Cook over low heat until the sauce thickens. Pour the sauce over the steak and serve with a mixed salad or a selection of vegetables.
