Soupe à l'oignon à la dulse (French Onion Soup with Dulse): Classic French recipe for a soup of caramelized onion in a meat stock base with white wine, dulse seaweed and garlic served in a white soup bowl garnished with a round of French bread topped with cheese.

Ingredients:

5 large onions, sliced
5 tbsp butter (or oil)
2 tbsp dried dulse flakes
3 dessert spoons plain flour
1l water
salt and freshly-ground black pepper, to taste
4 slices of baguette (French Breads), toasted
240g Gruyère cheese, grated

Method:

Add the dulse flakes to a bowl then cover with water and set aside to re-hydrate for 10 minutes before draining.

Melt the butter in a large pan, add the onions then sweat slowly, covered, over a low flame until the onions are soft and golden brown. Add the re-hydrated dulse then scatter the flour over the top and stir in to form a smooth roux. Cook, stirring constantly, for 1 minute then slowly whisk-in the water until smooth. Bring the mixture to a boil then season to taste, reduce to a low simmer, cover and cook for 30 minutes.

Divide the soup between 4 heat-proof bowls. Float the toasted baguette pieces on top then scatter the Gruyèr cheese over everything. Place under a pre-heated grill (broiler) and cook until the cheese has melted and is golden brown. Serve immediately.
