Ingredients:

60g carrots, cubed
30g turnip, cubed
30g celery, finely sliced
60g leeks, finely sliced
30g butter
salt and freshly-ground black pepper, to taste
1.2l brown stock
1 bouquet garni of: 3 parsley stalks, 1 bay leaf, spring of thyme tied securely in a leek leaf
croûtons, to garnish

Method:

Bring a pan of lightly salted water to a boil, add the vegetables and blanch for 3 minutes then drain and refresh under plenty of cold running water to prevent any further cooking. Drain and set aside.

Melt the butter in a pan and add the vegetables and cook for about 5 minutes, or until just tender but not coloured. Add the stock and bring to a boil. Skim any scum from the surface then add the bouquet garni and bring to a simmer. Cover and cook gently for about 25 minutes.

Remove the bouquet garni at this point and skim any remaining fat from the surface of the soup. Adjust the seasonings to taste then ladle into warmed soup bowls, garnish with fresh croûtons and serve.
