Ingredients:

225g onions, peeled and chopped
30g butter
a little stock or water
300ml Béchamel sauce
salt and freshly-ground black pepper, to taste

Method:

Melt the butter in a pan, add the onions and stir to coat then add a small amount of stock or water and continue cooking the onions until soft (about 12 to 15 minutes). Pass through a fine-meshed sieve, pressing down with the back of a spoon, then stir the resultant onion purée into the béchamel sauce and season to taste.

Re-heat for about 2 minutes (do not allow to boil) and serve as a sauce to accompany lamb, ham or beef.
