Sopaipillas

These are a from of Chilean flatbread made with squash that are dipped in a molasses-based sauce.

Ingredients:

For the Sopaipillas:
1kg plain flour
200g cooked butternut squash, mashed (boil in salted water for 20 minutes)
125g lard
salt to season
oil for frying

For the Sauce:


300ml water
100g molasses (black treacle)
1 stick cinnamon
peel of 1 orange, shredded

Method:

First make a stack of sopaipillas by forming a dough from the flour, salt, lard and squash. Form into a ball then pull-off a tennis ball-shaped piece. Knead and stretch this so that it becomes a round 1cm thick. Skewer this on a long-handled fork and dip in hot oil to fry until crisp and golden. Transfer to a plate and cook the next sopaipilla.

When done, prepare a sauce by heating the water in a large pan before adding the molasses, cinnamon and orange peel. Boil until the molasses dissolves then dip the sopaipillas in this one-by-one until they are coated. Serve immediately.
