This recipe is one of Madeira Island's specialties, characterized by its chewy texture. There are several variations of the recipe, each home making it differently. The richest recipes are prepared with pork and various vegetables, while the more humble ones only add lard and seeds.

Ingredients:

500g of wheat grains
500g of dried beans
1kg of potatoes, peeled and chopped
1kg of pumpkin
500g of salted pork
Kale (to taste)
Carrot (to taste)
Turnip (to taste)
Onion (to taste)
6l of water
Sweet potatoes (to taste)

Method:

Soak the wheat and beans in plenty of water over-night. Soak the salt pork in another large bowl.

The next day, cook the wheat, beans, and pork in a large pot of water. Bring to a boil, reduce to simmer and cook for about 40-50 minutes, until tender. Add the potatoes and the peeled and chopped vegetables.

Before serving, remove the meat and cut it into pieces.

Pour the soup into a bowl and add the chopped meat. Serve the sweet potato on the side.
