Sopa de Caracol (Honduran Conch Soup)
Sopa de Caracol (Honduran Conch Soup) is a traditional Honduran recipe for a classic soup of conch meat with cassava, green banans, chillies and carrots in a coconut milk base. Sopa de caracol is a traditional conch soup from Honduras. Various versions of this delicious seafood soup are also popular throughout Latin America and the Caribbean.
Ingredients:
1kg conch
2 x 400g tins coconut milk
3 green bananas, peeled and sliced
3 carrots, scraped and sliced
1kg cassava (manioc), peeled and sliced
3 garlic cloves, crushed
2 large white onions, chopped
1 small green bell pepper, coarsely chopped
2 green chillies, chopped
2 chicken stock cubes, crumbled
½ bunch coriander
½ bunch culantro
5 tbsp margarine
250ml milk
250ml water
2 tbsp
achiote oil (annatto oil)
Salt and freshly-ground black Pepper, to taste
Method:
Gently and carefully extract the meat from the conch. Place this on a chopping board and beat with a mallet to tenderize.
Cut the conch meat into 5cm squares and set aside.
Melt the margarine in a large cast-iron casserole (Dutch oven) over medium heat. Whilst stirring add the onions and cook for 1 minute.
Now stir in the garlic, bell peppers and chillies. Continue cooking, stirring constantly, for 3 minutes.
Scatter over the crumbled stock cubes then stir in the cassava and carrots and continue frying for 5 minutes.
Add the water and milk, stirring well to combine. Cover the casserole and continue cooking for 20 minutes over medium heat.
At this point add the green bananas and season to taste. Stir in the annatto oil, mix well and continue cooking for 8 minutes.
Finally add the conch pieces and cook, stirring, for 10 seconds. Finally, add the coriander and culantro and stir to combine.
Immediately take the pan off the heat and cover. Let it stand for 2 minutes before serving.
