Sopa de Arroz (Rice Soup) a Classic Peruvian recipe for a soup of rice, ham and potatoes in a beef bouillon base flavoured with parsley and Parmesan cheese.
Ingredients:
2 beef bouillon cubes
1.5l water
100g minced ham
4 tbsp rice
2 medium-sized white potatoes, peeled and chopped
2 tbsp finely-grated Parmesan cheese
1/2 tsp fresh parsley, finely chopped
Method:
Crumble the beef bouillon into the water and bring to a boil. Add the rice, potatoes and ham then bring back to a boil.
Cook for about 15 minutes, or until the rice and potatoes are tender.
Immediately before serving, stir in the Parmesan cheese and parsley.
