Curried chicken is a flavourful dish that’s popular in Saint Kitts and Nevis. It’s often served with rice and peas.
Ingredients:
1.8kg chicken, cut into serving-sized pieces
2 tbsp curry powder
1 onion, chopped
2 garlic cloves garlic, minced
1 bell pepper, sliced
2 tomatoes, diced
250ml coconut milk
2 tbsp vegetable oil
Salt and freshly-ground black pepper to taste
Method:
Heat oil in a pot and use to brown the chicken pieces on all sides. Add the onions, garlic, and curry powder, and cook until fragrant (about 2 minutes).
Now stir in the bell peppers, tomatoes, and coconut milk. Bring to a simmer and cook for about 30 minutes, until the chicken is cooked through.
