Rice and peas is a classic Caribbean side dish that’s often served with curried chicken or stewed meats. This speciffic version is from Saint Kitts and Nevis.

Ingredients:

400g long-grain rice, washed and drained
250ml coconut milk
250ml water
75g cooked kidney beans
1 onion, chopped
2 garlic cloves, minced
1 sprig thyme
Salt and freshly-ground black pepper to taste
oil for frying

Method:

Place a wok or deep-sided frying pan over medium heat. Once hot, add a generous glug of oil and use to fry the onions and garlic for about 5 minutes, or until soft and translucent.

Add the washed rice, coconut milk, water, beans, thyme, salt, and black pepper. Bring to a simmer, cover and cook for about 30 minutes, or until the rice is tender and all the liquid has been absorbed.

Take off the heat and set aside to steam for 5 minutes. At the end of this time, fluff the rice and serve.
