Nevis Roti

Rotis are another Indian recipe and just like curry they have become an integral part of many islands' culinary repertoire. They are softer and lighter than tortillas but are often used in the same way (primarily as wraps).

Ingredients:

180g flour
1½ tsp baking powder
½ tsp salt
1½ tbsp lard, diced
A few tablespoons of water

Method:

Sift together the four, baking powder and fine salt into a bowl. Whisk everything to ensure the ingredients are properly combined.

Work the lard into the dry ingredients until combined then add just enough water to bring everything together as a soft non-sticky dough.

Cover the and set aside to rest for an hour.

After this time, divide dough into six pieces, then roll out to 20cm diameter circles and cook individually in a heavy ungreased cast iron or nonstick skillet for about 3 minutes per side until they get just the slightest brown colour to them.
