Sesame Pork Stir-fry

Sesame Pork Stir-fry a Classic Australian fusion recipe for a dish of stir-fried pork tenderloin and mixed vegetables in a hoisin and sweet chilli base with chicken stock and sesame seeds.

Ingredients:

4 tbsp sesame seeds
1 tsp Chinese five-spice powder
1 pork tenderloin (about 400g), trimmed neatly and cut into 5mm thick rounds
80ml groundnut oil
1 tbsp finely-chopped fresh ginger
2 garlic cloves, crushed
1 red cayenne chilli, finely sliced into rounds
175g asparagus spears, trimmed and cut into bite-sized pieces
1 bunch of Chinese broccoli, trimmed and cut into bite-sized pieces
2 tbsp hoisin sauce
1 tbsp sweet chilli sauce
60ml chicken stock
80g beansprouts
227g tin of sliced water chestnuts, drained

Method:

Mix together the sesame seeds and five-spice powder. Scatter over a plate and roll the pork tenderloin in this until well coated.

Heat half the groundnut oil in a large wok over medium heat. Add the pork in batches, frying until golden brown and almost cooked through. Remove with a slotted spoon and drain on kitchen paper as you cook the next batch. Each time you remove a batch, ensure that you take out any sesame seeds left in the wok, or they will burn and turn the oil bitter.

Once the pork is cooked add the remaining oil to the wok then stir in the ginger, garlic and chilli. Stir-fry the mixture for 1 minute then add the asparagus and the stems of the Chinese broccoli. Stir-fry the mixture for between 2 and 3 minutes. Now mix together the sauces and add to the wok.

Bring the resultant mixture to a boil and stir in the chicken stock. Add the remaining broccoli, bean sprouts and water chestnuts, tossing together until they just wilt.

Return the sesame pork to the wok and stir-fry until the meat is heated through.

Serve the pork, accompanied by steamed white rice.
