Sega Wot (Red Beef Stew) is a traditional Ethiopian recipe for a classic stew of beef, and onion cooked in vegetable oil that's finished in a highly-spiced stock. The full recipe is presented here and I hope you enjoy this classic Ethiopian version of: Red Beef Stew (Sega Wot).

Ingredients:
750g beef, cubed
2 1/2 large onions, finely chopped
250ml vegetable oil
1 1/2 tbsp minced garlic
1 tsp finely-grated ginger
4 tbsp Berbere spice
1 tsp Wot Kimem
1 tsp sea salt (or to taste)
60ml water
Method:
Heat the vegetable oil in a large pot and stir in the onion and garlic. Simmer gently for about 10 minutes, or until lightly golden. Add the Berbere spice and continue simmering over low heat for 15 minutes, stirring occasionally.
Now add the beef and water. Return to a simmer and continue cooking for about 40 minutes, or until the beef is tender and cooked through.
Finish by mixing in the wot kimem and seasoning with salt, to taste. Serve hot with Injeera.
