Savoury Potato Roulade: An Irish recipe for a dish of a potato pastry with a beef, chorizo, onion ,bell pepper, cheese and mushroom filling that's oven baked to cook and served sliced into rounds.
Ingredients:
550g potatoes, boiled and mashed whilst hot
60g full-fat soft cheese (one with herbs or garlic)
1 egg, beaten
350g lean beef, minced
115g chorizo sausage, finely chopped
1 small onion, chopped
1/2 red bell pepper, finely chopped
60g mushrooms, chopped
1 tbsp sun-dried tomato paste (or tomato purée)
1 small handful of fresh basil leaves, chopped
90g Gruyère cheese, grated
salt and freshly-ground black pepper, to taste
Method:
Mix the soft cheese and all but 1 tbsp of the egg into the potatoes. Spread the resultant mixture over a lightly-greased rectangle of greaseproof paper (about 33 x 28cm).
In the meantime, mix together the beef, sausage, onion, bell pepper, mushrooms and tomato purée. Season to taste, then spread this mixture over the potatoes. Scatter over the basil leaves, pressing them lightly into the meat mixture.
Using the paper to help you roll up the potato dough like a Swiss (jelly) roll so that the meat filling is enclosed within. Transfer to a baking tray, ensuring that the seam is on the bottom. Brush the surface with the remaining egg and sprinkle over the cheese.
Transfer to an oven pre-heated to 180°C and bake for about 80 minutes, or until cooked through. Slice into rounds and serve.
