This recipe for savory baked island chicken is tangy and flavoursome and is so easy to make. Just prepare the marinade the day before (or up to three hours before cooking) and bake in the oven right before dinner.
Ingredients:
675g chicken thighs, boneless skinless
sea salt and cracked black pepper
2 tbsp extra-virgin olive oil
3 tbsp freshly squeezed lemon juice (from about 1-2 lemons)
finely-grated zest of one lemon
1 ½ tbsp light soy sauce
2 garlic cloves, finely minced
1/2 scotch bonnet chilli, minced (or to taste)
2 tbsp fresh oregano
¼ tsp sea salt
¼ tsp freshly-ground black pepper
Method:
Season the chicken with salt and black pepper. Grease a roasting tin with a little oil.
Combine all the other ingredients (except the chicken) in a bowl. Whisk until the marinade is well combined.
Arrange the the chicken breasts on a roasting tin and cover with the marinade. Refrigerate and marinate for up to 10 hours. The longer you marinate the better the chicken will be.
Pre-heat the oven to 180ºC . Drain the excess marinade and reserve.
Transfer the roasting tin to your oven and bake the chicken breasts, basting occasionally with the excess marinade. Bake in the oven until cooked through (about 45 minutes — the exact baking time will depend on the size of your chicken pieces).
Remove from the oven and allow to rest for 5 minutes before serving.
