This is another classic recipe from Emilia Romagna in Italy that's also prepared in San Marino.
Ingredients:
500g dried beans
300g pork rinds
2 onions, diced
1 carrot, diced
1 celery stick, diced
salt and freshly-ground black pepper
100ml passata (tomato sauce)
toasted bread, to serve
olive oil, for frying
Method:
Wash the beans, place in a large bowl, cover with plenty of water then set aside to soak over night. The following day, drain the beans then place in a large pan, cover with water and bring to boil. Cook for about 50 minutes, or until soft but still whole then drain and set aside.
Bring another pan of water to a boil, add the pork rinds and cook for about 5 minutes, or until they loose a little fat and soften. Drain the pork rinds then cut into strips and set aside.
Heat a little oil in a pan, add the onions, carrot and celery stick and cook for about 8 minutes, or until just softened. Add the pork rind strips and continue frying for a few minutes. Now stir in the beans then add the tomato sauce. Bring to a boil, reduce to a low simmer and cook for about 30 minutes, or until tender (add water if the sauce becomes too thick).
Serve hot, accompanied by thick wedges of toasted bread.
