Samarkandskij Jagnenok (Samarkand Lamb) is a traditional Uzbek recipe for a classic stew of lamb with red cabbage, vegetables and marinated tomatoes cooked in meat stock. The full recipe is presented here and I hope you enjoy this classic Uzbek version of: Samarkand Lamb (Samarkandskij Jagnenok).

Ingredients:
500g lamb, sliced into serving pieces
1 garlic clove, chopped
1 red cabbage, shredded
350g mixed vegetables, copped
1 jar vinegar marinated tomatoes
1 tbsp flour
500ml meat stock
salt, to taste
Method:
Salt the meat than add a little oil to a pan and fry until browned. Arrange the red cabbage and vegetables in the base of a heat-proof casserole.
Scatter the flour over the meat then add to the casserole dish along with the tomatoes and meat stock. Cover the pan then transfer to an oven pre-heated to 170°C and cook for about 90 minutes, or until all the ingredients are tender.
Serve hot, accompanied with fresh and pickled vegetables.
