This is a vegetarian recipe for a classic Rajasthani curry flavoured with
Special Jaipuri Masala and finished with fresh cream
Ingredients:
For the Onion Tomato Paste:
150g (1 cup) Onion, coarsely chopped
200d (1 cup) Tomato, coarsely chopped
3cm piece of Ginger, peeled and grated
3 garlic cloves, grated
For the vegetable Jaipuri
500g (3 cups) Mixed vegetables (eg potatoes, green beans, green peas, cauliflower, carrot)
½ cinnamon stick
6 whole Cloves
The Onion-tomato mixture
3 tbsp
Special Jaipuri Masala
1 tsp hot chilli powder
1 tsp Garam masala
sea salt, to taste
1 tbsp Kasoori methi (dried fenugreek leaves)
1 tbsp Fresh cream
2 tbsp Oil or ghee
Method:
Begin by preparing the onion-tomato paste: Combine the onion, tomato, ginger, and garlic in a blender. Pulse to chop then render to a smooth paste.
Bring a pan of lightly-salted water to a boil. Add the vegetables and cook for 5 minutes then drain in a colander.
To prepare the vegetarian Jaipuri: Place a wok, kadhai or deep frying pan over medium heat. Once hot add the oil or ghee and use to fry the cinnamon stick and cloves for about 90 seconds, until aromatic.
Now scrape in all onion-tomato purée and stir-fry for 5 minutes. Scatter over the chilli powder and garam masala, stir to combine and continue cooking over medium heat for about 10 minutes, or until the mixture is aromatic and the oil begins to separate.
Gently stir in the par-boiled vegetables and mix well to combine. Adjust the consistency of the curry by adding more water as needed.
Scatter over the Jaipuri masala, stir to combine, taste and add salt if needed. Let the vegetable Jaipuri simmer until the flavors combine (about 10 minutes).
Stir in the kasoori methi, add a swirl of fresh cream and serve.
