This is a classic Rajashthani recipe for a spice blend used in preparing Jaipuri curries.
Ingredients:
3 star anise
4 blades mace (javitri)
2 top nigella (kalonji) seeds
1 tbsp fennel seeds
4 Indian bay leaves
6 cloves
6 dried red chillies
2 tsp cumin seeds
1 tbsp sesame seeds
1 tsp black peppercorns
6 greem cardamom pods, crushed
1 tsp fenugreek seeds
2 tsp black mustard seeds
1 tbsp coriander seeds
8 pieces cassia bark
1 tbsp cashew nuts
Method:
Dry toast the spices together for about 2 minutes until lightly browned and aromatic.
Turn onto a plate and allow to cool then transfer the spices to a spice or coffee grinder and render to a fine powder.
