Re-fried Beans is a traditional Mexican recipe for a classic dish of cooked beans that are then mashed and cooked once more by frying in lard. The full recipe is presented here and I hope you enjoy this classic Mexican version of: Re-fried Beans.

Ingredients:
400g pinto beans (or barlotti beans)
2 sprigs epazote (if available)
100g lard
1/2 tsp freshly-minced garlic
1 serrano chilli, de-seeded and halved
salt to taste
Method:
Rinse the beans and place in a large pot and top-up with 1.5l water. Add the epazote and bring the mixture to a boil. Reduce to a low simmer and cook for 2 hours (top-up with more water as necessary).
When the beans are very soft prepare a large frying pan by melting the lard over medium heat. Cook the chillies until brown then, using a slotted spoon, add about 100g of the beans and mash. If the mixture looks a little thick add 1 tbsp of the cooking liquid.
Continue to add beans a little at a time, mashing and adding liquid as necessary. When done remove the chillies, mix-in the garlic and season.
