Red Onion and Mozzarella Pizza: A British recipe for a pizza of a pizza dough base topped with vegetables, pesto sauce and cheese that's served garnished with rocket (arugula).

Ingredients:

For the Base:
150g perfect pizza base dough (ie made with 300g flour)

For the Topping:
2 tbsp olive oil
2 large red onions, cut into 24 wedges
2 garlic cloves, chopped
2 tbsp balsamic vinegar
40g soft brown sugar

1 batch pesto sauce
100g mozzarella cheese
50g feta cheese
salt and freshly-ground black pepper, to taste
rocket (arugula) and toasted pine nuts, to serve

Method:

Prepare the pizza base according to the perfect pizza base dough recipe.

Heat the olive oil in a pan, add the onion and garlic and fry for about 5 minutes, or until browned. Add the balsamic vinegar and the sugar along with 100ml water.

Bring the mixture to a boil then cover with a lid, reduce to a simmer and cook until almost all the liquid has evaporated.

Dust your work surface with flour and roll out your pizza dough into a round about 30cm in diameter. Transfer the pizza dough round onto a baking tray.

Spread a thin layer of pesto sauce over the pizza base then top with the caramelized onion mixture. Tear the mozzarella into pieces and sit on top then crumble over the feta cheese. Season with salt and black pepper then transfer to an oven pre-heated to 200°C and bake for about 12 minutes, or until the base is cooked through and crisp.

Remove from the oven, garnish with the rocket leaves and pine nuts, cut into wedges and serve.
