Sun-dried Tomato and Garlic Pesto

Ingredients:

120g sun-dried tomatoes
1 tsp chopped fresh basil
1 1/2 tsp chopped fresh parsley
6 garlic cloves, chopped
35g pine nuts, chopped
30g onion, chopped
60ml balsamic vinegar
15g tomato paste
80g fresh plum tomatoes, blanched, peeled and de-seeded
60ml red wine
120ml olive oil
50g freshly-grated Parmesan cheese
salt and black pepper, to taste

Method:

Place the sun-dried tomatoes in a bowl, cover with warm water and allow to sit for 10 minutes, or until tender.

Transfer the sun-dried tomatoes to a food processor (reserve the liquid) and add the basil, parsley, garlic, pine nuts and onion. Process until smooth then add the vinegar, tomato paste, plum tomatoes and red wine. Once more process until smooth then add the olive oil and Parmesan cheese. Add a little of the tomato soaking water if too thick then season to taste. This will keep in the refrigerator for several days.
