Ingredients:
675g mutton, cut into pieces parsley sprigs
6 carrots, sliced
900g potatoes, peeled and sliced
salt and freshly-ground black pepper
450g onions, sliced
Method:
Combine the meat and vegetables in a saucepan and cover with water. Season to taste then add a few parsley sprigs and slowly bring the mixture to a boil. Skim off any fat as it rises to the surface then reduce to a low simmer, cover with a lid, and cook for about 2 hours or until the meat is tender.
Serve hot, ladled into bowls and accompanied by crusty Breads.
