Râgout de Boeuf aux Bananes (Beef Stew with Plantains)
Râgout de Boeuf aux Bananes (Beef Stew with Plantains) is a traditional Central African Republic recipe for a classic stew of beef and plantains in a curried onion, tomato and bell pepper base. Ingredients:
600g beef, finely chopped
3 plantains, peeled and cut into 4 sections each
2 onions, finely chopped
1 green bell pepper, sliced into thin strips
3 tomatoes, quartered
2 tbsp red palm oil
3 beef bouillon cubes
1 tbsp curry powder
salt and freshly-ground black pepper, to taste
Method:
Heat the oil in a large pan, add the meat and fry until nicely browned all over. Add the onions and cook for about 8 minutes more, or until browned.
Add the tomatoes and bell pepper and stir-fry for 3 minutes. Pour in 1l water and crumble in the bouillon cubes. Stir in the curry powder and season to taste. Bring the mixture to a boil, reduce to a simmer, cover and cook for 40 minutes.
After this time, add the plantain pieces and cook for 15 minutes more.
