Pressure Cooker Curried Beef Stew is a traditional South African recipe for a classic beef curry in a tomato and chilli-based sauce that's adapted to be cooked in the pressure cooker. Ingredients:
2 tbsp groundnut oil
600g stewing steak, cut into 1.5cm cubes
1/2 large onion, finely chopped
2 large tomatoes, cored and chopped
1/2 tsp salt
1 tsp Cape Curry Powder
2 carrots, sliced into rings
1 scotch bonnet chilli, pounded to a paste
Method:
Heat the oil in a pressure cooker and add the meat cubes. Fry on each side until they are evenly browned. Then add the onion, tomatoes, carrots and the chilli paste.
Stir in 100ml of water, secure the lid on your pressure cooker, bring up to pressure and cook for 20 minutes. Place under cold, running, water to reduce the pressure quickly. Open the pressure cooker lid.
Serve on a bed of rice and accompanied by a bowl of chilli flakes which can be sprinkled on top.
