Ingredients:

For the Pepper Sauce:
1 red bell pepper
2 Thai birds' eye chillies, stems removed
50g baby carrots
240ml passata (tomato sauce) [reserve 1 tbsp for later use]
2 garlic cloves
2 tsp ground ginger
1 tsp ground turmeric
1 tsp sea salt
1 tsp freshly-ground black pepper
1 tsp cayenne pepper
1/2 tsp ground cardamom

For the Beef:
2 tbsp olive oil
1kg beef, cut into strips
250ml water
1/2 tsp paprika
1/2 tsp ground cumin
1 onion, sliced
1 green bell pepper, sliced
salt and freshly-ground black pepper, to taste

Method:

Begin by preparing the pepper sauce. De-seed and roughly chop the red bell pepper. Combine in a food processor with the chillies, baby carrots, passata (reserve 1 tbsp of this for later), garlic, ginger, turmeric, salt, black pepper, cayenne pepper and cardamom. Process until smooth then set aside.

Heat the oil in your pressure cooker. Season the beef to taste then brown in the oil over medium heat. As soon as the meat is evenly browned add the water, the 1 tbsp reserved passata, paprika and cumin. Seal the pressure cooker lid, place over high heat and bring to pressure. Reduce the heat to medium to stabilize the pressure and cook for 10 minutes.

Allow the pressure cooker to cool naturally then remove the lid. Place the pressure cooker back on the hob and stir in the pepper mixture, the onion and green bell pepper. Secure the lid, bring back to pressure and cook for 10 minutes.

Allow the pressure to reduce naturally and serve.
