Poulet Créole (Creole Chicken)

Ingredients:

2 chicken breasts
finely-grated zest of 1 lime
juice of 1 lime
2 tbsp curry paste
140g long-grain white rice
1 tbsp raisins
1 tbsp fried onions
pinch of mixed spices (turmeric, nutmeg, cumin, coriander etc)
oil for frying

Method:

Cook the rice according to the method in the perfect steamed rice recipe.

Heat a little oil in a wok, cut the chicken into bite-sized pieces and fry for about 5 minutes, or until nicely browned all over. Add the curry paste, fried onions and raisins. Stir to coat the chicken in this mixture then add the lime juice and lime zest.

Season to taste and cook for a few minutes then stir in the rice, tossing to mix with the other ingredients.

Serve hot.
