Poulet Créole (Creole Chicken) is a traditional Mauritian recipe for a classic one-pot dish of chicken pieces cooked in a curry base with raisins and onions that's finished with the addition of steamed rice. Heat a little oil in a wok, cut the chicken into bite-sized pieces and fry for about 5 minutes, or until nicely browned all over. Add the curry paste, fried onions and raisins. Stir to coat the chicken in this mixture then add the lime juice and lime zest.
Season to taste and cook for a few minutes then stir in the rice, tossing to mix with the other ingredients.
