Here is a classic Irish recipe from the 1880s. Rather than being herrings preserved in butter (as English potted herrings of the time were), this is a dish of herrings coked in a fireproof pot. Effectively this is a recipe for pickled, jugged, herrings.

Ingredients:

8 herrings, cleaned, scaled and with heads and tails removed
sea salt
4 bayleaves
1 onion, peeled and sliced
1 tsp pickling spice
equal mix of vinegar and water

Method:

Wash the herrings well and pat dry then rub lightly both inside and out with salt. Arrange in an oven-proof dish then top with the bayleaves and onions. Scatter over the pickling spice then pour over just enough of a 1:1 mix of malt vinegar and water to just over the fish.

Cover the dish with a sheet of foil (crimp this down securely) then transfer to an oven pre-heated to 160°C and bake for about 35 minutes.

Remove the fish from the oven and allow the herrings to cool completely in the pickling liquid.

Serve cold, with a little of the cooking liquid spooned over the fish. Accompany with plain boiled potatoes and crusty bread.
